So I'm still kinda new to anime and have only seen one or two things. What would you recommend I watch?

It really depends on the genre that you're looking for.

What exactly would interest you? Typical Shonen things? Romance? Isekai (another world)?

Without knowing that, I'd probably just recommend some classics like Full Metal Alchemist: Brotherhood, Death Note, Demon Slayer, or Hunter x Hunter.

I would suggest a title that isn't too lengthy and is generally considered to be good to an American audience. Here are few suggestions from me:

Any Studio Ghibli Film
At most they are two hours long and are considered to be the best anime films ever released. My Neighbor Totoro, Howl's Moving Castle and Spirited Away are the most popular films and all worth watching.

Cowboy Bebop
Chill anime about a bounty hunter in space. It's considered a classic and just has the one season, do it's a quick watch.

Full Metal Alchemist: Brotherhood
You can skip the first series, this one hits the nail on the head and it's a great series to start off on.

I saw some episodes of the One Piece live action show and enjoyed them. I need to see the TV series for it.

It's a great series and the live action did a pretty good job as well. Do keep in mind it's an ongoing series that started in the 90s and has over 1,000 episodes, so it's quite a commitment.

This is actually the reason why I wouldn't be too quick to recommend this anime for a newbie because I wouldn't know if he or she would have the will to go all the way to watch all the episodes because they are so many.
